A reimagined Ivorian dessert recipe creation. An Ode to the rich ancestry and flavours of West African street beverages and beyond. This layered sorbet features a vibrant scoop of Bissap (hibiscus mint drink) sorbet,  crowned with a refreshing Gnamakoudji (ginger pineapple drink) sorbet. The pairing strikes a dynamic balance of the sweet minty tart notes and the spicy warmth of fresh ginger.
It's finished with a Bissap-inspired blueberry compote and lime zest. Drunken cherries steeped in Red Label wine. An homage to the art of flavours layering in Afro-Caribbean culinary traditions.
